Ingredients
  • 500 gram Potatoes
  • 300 gram Carrots
  • 300 gram Zucchini
  • 200 gram Bell peppers
  • 150 gram Red onion
  • 4 piece Garlic cloves
  • 3 tablespoon Olive oil
  • 1 teaspoon Fresh thyme
  • 1 teaspoon Fresh rosemary
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Preheat the oven to 200°C (400°F).
  2. Wash and chop all the vegetables into bite-sized pieces.
  3. In a large bowl, combine the chopped vegetables, minced garlic, olive oil, fresh thyme, fresh rosemary, salt, and black pepper. Toss well to coat all the vegetables evenly.
  4. Transfer the vegetables to a baking sheet and spread them out in a single layer.
  5. Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and golden brown.
  6. Remove from the oven and let the roasted vegetables rest for 5 minutes.
  7. Serve hot and enjoy!
