Ingredients
  • 1 cup Onion
  • 3 clove Garlic
  • 1 cup Bell Pepper
  • 1 cup Carrot
  • 1 cup Zucchini
  • 1 can Canned Tomatoes
  • 1 can Kidney Beans
  • 1 can Black Beans
  • 1 cup Corn
  • 2 teaspoon Chili Powder
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 cup Vegetable Broth
  • 2 tablespoon Olive Oil
Instructions
  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, bell pepper, carrot, and zucchini. Cook until vegetables are tender.
  3. Add canned tomatoes, kidney beans, black beans, corn, chili powder, cumin, paprika, salt, and pepper. Stir well.
  4. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes.
  5. Remove from heat and let it rest for 10 minutes.
  6. Serve hot and enjoy!
