Ingredients
  • 2 cup Black-Eyed Peas
  • 1 cup Rice
  • 4 cup Vegetable Broth
  • 1 medium Onion
  • 1 medium Bell Pepper
  • 2 stalks Celery Stalks
  • 3 cloves Garlic Cloves
  • 1 medium Tomato
  • 1 teaspoon Cajun Seasoning
  • 1 teaspoon Thyme
  • 1 leaf Bay Leaf
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 stalks Green Onion
  • 1 tablespoon Parsley
Instructions
  1. Rinse and drain the black-eyed peas.
  2. In a large pot, heat some oil over medium heat.
  3. Add the onion, bell pepper, celery, and garlic. Sauté until the vegetables are softened.
  4. Add the black-eyed peas, rice, vegetable broth, tomato, Cajun seasoning, thyme, bay leaf, salt, and black pepper to the pot.
  5. Bring to a boil, then reduce heat to low and cover. Simmer for about 45 minutes, or until the black-eyed peas and rice are tender.
  6. Remove from heat and let it rest for 10 minutes.
  7. Garnish with green onion and parsley before serving.
