Ingredients
  • 1 cup Wild rice
  • 1 medium Bell pepper
  • 1 medium Cucumber
  • 1 cup Cherry tomatoes
  • 1 small Red onion
  • 2 tablespoon Fresh parsley
  • 2 tablespoon Fresh mint
  • 2 tablespoon Lemon juice
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Cook the wild rice according to package instructions.
  2. In a large bowl, combine the cooked wild rice, bell pepper, cucumber, cherry tomatoes, red onion, parsley, and mint.
  3. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.
