Ingredients
  • 200 gram Vermicelli
  • 200 gram Mixed Vegetables (carrots, peas, beans, corn, etc.)
  • 1 medium Onion
  • 2 piece Green Chilies
  • 1 inch Ginger
  • 1 sprig Curry Leaves
  • 1 teaspoon Mustard Seeds
  • 1 teaspoon Urad Dal (Split Black Gram)
  • 1 teaspoon Chana Dal (Split Bengal Gram)
  • 1 teaspoon Turmeric Powder
  • 1 tablespoon Lemon Juice
  • 1 teaspoon Salt
  • 2 cup Water
  • 2 tablespoon Oil
Instructions
  1. Heat oil in a pan and add mustard seeds. Once they start spluttering, add urad dal and chana dal.
  2. Add chopped onion, green chilies, ginger, and curry leaves. Saute until onions turn translucent.
  3. Add mixed vegetables and turmeric powder. Cook for 5 minutes.
  4. Meanwhile, boil water in a separate pan and cook vermicelli until al dente. Drain and keep aside.
  5. Add cooked vermicelli to the vegetable mixture and mix well. Cook for another 2-3 minutes.
  6. Add lemon juice and salt. Mix well.
  7. Remove from heat and let it rest for 5 minutes.
  8. Serve hot and enjoy!
