Ingredients
  • 1 medium Onion
  • 4 clove Garlic cloves
  • 2 large Carrots
  • 2 medium Potatoes
  • 1 medium Eggplant
  • 2 medium Bell peppers
  • 1 can Canned chickpeas
  • 1 can Canned diced tomatoes
  • 1 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Ground turmeric
  • 0.5 teaspoon Ground cinnamon
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Fresh cilantro
  • 2 tablespoon Fresh parsley
  • 4 serving Lemon wedges
Instructions
  1. Heat olive oil in a large pot over medium heat. Add the onion and garlic, and cook until onion is translucent.
  2. Add the carrots, potatoes, eggplant, bell peppers, chickpeas, and diced tomatoes to the pot. Stir in the vegetable broth.
  3. Add the ground cumin, coriander, turmeric, cinnamon, salt, and black pepper. Stir well to combine.
  4. Bring the mixture to a boil, then reduce heat to low. Cover the pot and simmer for 45 minutes, or until the vegetables are tender.
  5. Remove from heat and let the tagine rest for 10 minutes.
  6. Serve hot, garnished with fresh cilantro and parsley. Serve with lemon wedges on the side.
