Ingredients
  • 200 gram Carrots
  • 150 gram Celery
  • 150 gram Onion
  • 2 clove Garlic
  • 300 gram Tomatoes
  • 300 gram Potatoes
  • 200 gram Zucchini
  • 150 gram Green beans
  • 4 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 4 tablespoon Pistou
Instructions
  1. In a large pot, heat olive oil over medium heat. Add onion, garlic, carrots, celery, and cook until vegetables are tender.
  2. Add tomatoes, potatoes, zucchini, green beans, vegetable broth, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
  3. In a blender or food processor, blend the pistou ingredients until smooth.
  4. Serve the vegetable soup hot, topped with a spoonful of pistou.
