Ingredients
  • 4 piece Pita bread
  • 1 can Chickpeas
  • 1 medium Cucumber
  • 2 medium Tomato
  • 1 small Red onion
  • 1 medium Bell pepper
  • 1 bunch Fresh parsley
  • 1 piece Lemon
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Ground cumin
  • 1 cup Greek yogurt
Instructions
  1. Drain and rinse the chickpeas.
  2. Chop the cucumber, tomato, red onion, bell pepper, and fresh parsley.
  3. In a large bowl, combine the chickpeas, chopped vegetables, lemon juice, olive oil, salt, black pepper, and ground cumin. Mix well.
  4. Cut the pita breads in half and open the pockets.
  5. Fill each pita pocket with the vegetable mixture.
  6. Serve with a dollop of Greek yogurt on top.
