Ingredients
  • 1 cup Basmati Rice
  • 1 cup Mixed Vegetables (e.g. carrots, peas, bell peppers)
  • 1 medium Onion (chopped)
  • 2 cloves Garlic (minced)
  • 1 teaspoon Ginger (grated)
  • 1 teaspoon Cumin Seeds
  • 1 teaspoon Turmeric Powder
  • 1 piece Cinnamon Stick
  • 1 leaf Bay Leaf
  • 1 teaspoon Salt
  • 2 cup Vegetable Stock
  • 2 tablespoon Oil
  • 2 tablespoon Fresh Coriander Leaves (chopped)
Instructions
  1. Rinse the basmati rice in water until the water runs clear. Soak it in water for 20-30 minutes and then drain.
  2. Heat oil in a large pan over medium heat. Add cumin seeds, cinnamon stick, and bay leaf. Sauté for a minute.
  3. Add chopped onion and sauté until golden brown.
  4. Add minced garlic and grated ginger. Sauté for a minute.
  5. Add mixed vegetables and sauté for 2-3 minutes.
  6. Add soaked and drained rice, turmeric powder, and salt. Mix well.
  7. Pour in vegetable stock and bring it to a boil. Reduce the heat to low, cover the pan, and let it simmer for about 15-20 minutes or until the rice is cooked and the liquid is absorbed.
  8. Remove the pan from heat and let it rest for 5 minutes.
  9. Fluff the pilaf with a fork and garnish with chopped fresh coriander leaves.
  10. Serve hot and enjoy!
