  3. Add chopped onion and sauté until golden brown.
  4. Add minced garlic and grated ginger. Sauté for a minute.
  5. Add mixed vegetables and sauté for 2-3 minutes.
  6. Add soaked and drained rice, turmeric powder, and salt. Mix well.
  7. Pour in vegetable stock and bring it to a boil. Reduce the heat to low, cover the pan, and let it simmer for about 15-20 minutes or until the rice is cooked and the liquid is absorbed.
  8. Remove the pan from heat and let it rest for 5 minutes.
  9. Fluff the pilaf with a fork and garnish with chopped fresh coriander leaves.
