Rinse the basmati rice in water until the water runs clear. Soak it in water for 20-30 minutes and then drain.

Heat oil in a large pan over medium heat. Add cumin seeds, cinnamon stick, and bay leaf. Sauté for a minute.

Add chopped onion and sauté until golden brown.

Add minced garlic and grated ginger. Sauté for a minute.

Add mixed vegetables and sauté for 2-3 minutes.

Add soaked and drained rice, turmeric powder, and salt. Mix well.

Pour in vegetable stock and bring it to a boil. Reduce the heat to low, cover the pan, and let it simmer for about 15-20 minutes or until the rice is cooked and the liquid is absorbed.

Remove the pan from heat and let it rest for 5 minutes.

Fluff the pilaf with a fork and garnish with chopped fresh coriander leaves.
