Ingredients
  • 2 cup Zucchini
  • 1 cup Carrots
  • 1 small Onion
  • 2 large Egg
  • 1/2 cup Flour
  • 1/2 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 2 tablespoon Olive oil
Instructions
  1. Grate the zucchini, carrots, and onion.
  2. Squeeze out excess moisture from the grated vegetables.
  3. In a large bowl, whisk together the eggs, flour, baking powder, salt, and black pepper.
  4. Add the grated vegetables to the bowl and mix well.
