Ingredients
  • 1 cup Onion
  • 1 cup Bell pepper
  • 1 cup Celery
  • 3 clove Garlic
  • 1 cup Okra
  • 2 cup Tomatoes
  • 4 cup Vegetable broth
  • 2 leaf Bay leaves
  • 1 teaspoon Thyme
  • 1 teaspoon Paprika
  • 1/2 teaspoon Cayenne pepper
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 2 cup Cooked rice
  • 2 tablespoon Green onions
  • 2 tablespoon Parsley
Instructions
  1. Heat oil in a large pot over medium heat. Add onion, bell pepper, and celery. Cook until softened, about 5 minutes.
  2. Add garlic, okra, tomatoes, vegetable broth, bay leaves, thyme, paprika, cayenne pepper, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.
  3. Serve the gumbo over cooked rice and garnish with green onions and parsley.
