Ingredients
  • 2 teaspoon Coconut oil
  • 3 tablespoon Green curry paste
  • 2 cup Coconut milk
  • 1 cup Vegetable broth
  • 1 cup Green beans
  • 1 cup Bell pepper
  • 1 cup Zucchini
  • 1 cup Eggplant
  • 1 cup Tofu
  • 2 tablespoon Soy sauce
  • 1 tablespoon Palm sugar
  • 0.5 cup Thai basil leaves
  • 2 tablespoon Lime juice
  • 0.5 teaspoon Salt
  • 2 cup Cooked rice
Instructions
  1. Heat coconut oil in a pan. Add green curry paste and cook for 1 minute.
  2. Pour in coconut milk and vegetable broth. Bring to a simmer.
  3. Add green beans, bell pepper, zucchini, eggplant, and tofu. Cook for 10 minutes.
  4. Stir in soy sauce, palm sugar, Thai basil leaves, lime juice, and salt.
  5. Simmer for another 5 minutes.
  6. Serve the vegetable green curry over cooked rice.
