Ingredients
  • 200 gram Zucchini
  • 150 gram Carrot
  • 100 gram Corn kernels
  • 100 gram Red bell pepper
  • 50 gram Green onions
  • 100 gram Chickpea flour
  • 50 gram Rice flour
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Pepper
  • 1/4 teaspoon Paprika
  • 1/4 teaspoon Cumin
  • 1/2 cup Water
  • 2 tablespoon Olive oil
  • 1 tablespoon Lime juice
  • 1 tablespoon Fresh cilantro
  • 200 gram Tomato
  • 50 gram Red onion
  • 20 gram Jalapeno pepper
  • 1 tablespoon Lime juice
  • 1/2 teaspoon Salt
Instructions
  1. Grate the zucchini and carrot. Chop the red bell pepper and green onions.
  2. In a large bowl, combine the grated zucchini, carrot, corn kernels, red bell pepper, green onions, chickpea flour, rice flour, baking powder, salt, pepper, paprika, cumin, water, olive oil, and lime juice. Mix well.
  3. Heat a frying pan over medium heat and add olive oil. Scoop a spoonful of the vegetable mixture onto the pan and flatten it with the back of the spoon. Cook for 3-4 minutes on each side until golden brown.
  4. In a separate bowl, combine the chopped tomato, red onion, jalapeno pepper, lime juice, and salt to make the corn salsa.
  5. Serve the vegetable fritters with the corn salsa on the side.
