Ingredients
  • 2 teaspoon Vegetable oil
  • 1 medium Onion
  • 3 clove Garlic cloves
  • 1 teaspoon Ginger
  • 2 teaspoon Curry powder
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Cumin powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Red chili powder
  • 2 medium Potato
  • 2 medium Carrot
  • 2 cup Cauliflower florets
  • 1 cup Green peas
  • 1 cup Coconut milk
  • 1 teaspoon Salt
  • 2 tablespoon Fresh coriander leaves
Instructions
  1. Heat vegetable oil in a pan.
  2. Add chopped onion, minced garlic, and grated ginger. Cook until onion turns translucent.
  3. Add curry powder, turmeric powder, cumin powder, coriander powder, and red chili powder. Stir well.
  4. Add diced potatoes, carrots, cauliflower florets, and green peas. Mix well.
  5. Pour coconut milk and add salt. Stir and cover the pan with a lid.
  6. Simmer for 20 minutes or until the vegetables are cooked.
  7. Garnish with fresh coriander leaves.
  8. Serve hot with rice or bread.
