Ingredients
  • 200 gram Zucchini
  • 150 gram Carrot
  • 100 gram Cornmeal
  • 50 gram All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Paprika
  • 2 tablespoon Chopped parsley
  • 2 tablespoon Chopped scallions
  • 1/2 cup Water
  • 1/4 cup Vegetable oil
Instructions
  1. Grate the zucchini and carrot. Squeeze out any excess moisture.
  2. In a large bowl, combine the grated zucchini, carrot, cornmeal, all-purpose flour, baking powder, salt, black pepper, paprika, chopped parsley, chopped scallions, and water. Mix well.
  3. Heat vegetable oil in a frying pan over medium heat.
  4. Drop spoonfuls of the vegetable mixture into the hot oil and flatten slightly with the back of the spoon.
  5. Cook for 2-3 minutes on each side, until golden brown.
  6. Remove from the pan and drain on paper towels.
  7. Serve hot as an appetizer or snack.
