Cook the noodles according to the package instructions. Drain and set aside.

Heat vegetable oil in a large pan or wok over medium-high heat.

Add minced garlic and grated ginger, sauté for 1 minute.

Add sliced carrots, bell peppers, cabbage, and bean sprouts. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.

Add the cooked noodles to the pan and stir-fry for an additional 2 minutes.

In a small bowl, mix together soy sauce, sesame oil, salt, and black pepper. Pour the sauce over the noodles and vegetables. Stir-fry for another 2 minutes.

Garnish with sliced green onions and serve hot.
