Ingredients
  • 1 cup Barley
  • 1 cup Couscous
  • 2 cup Vegetable broth
  • 2 medium Carrot
  • 1 medium Zucchini
  • 1 medium Bell pepper
  • 1 small Red onion
  • 2 clove Garlic cloves
  • 2 tablespoon Olive oil
  • 2 tablespoon Lemon juice
  • 2 tablespoon Fresh parsley
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. In a large pot, bring the vegetable broth to a boil.
  2. Add barley and cook for 20 minutes, or until tender.
  3. In a separate pot, cook couscous according to package instructions.
  4. Heat olive oil in a skillet over medium heat.
  5. Add garlic, onion, carrots, zucchini, and bell pepper. Saute for 5 minutes.
  6. Add cooked barley and couscous to the skillet and mix well.
  7. Season with salt, black pepper, lemon juice, and fresh parsley.
  8. Cook for an additional 5 minutes, stirring occasionally.
  9. Remove from heat and let it rest for 10 minutes.
  10. Serve hot and enjoy!
