Ingredients
  • 1 cup Lentils
  • 2 cup Vegetable broth
  • 2 medium Carrots
  • 2 medium Potatoes
  • 1 small Onion
  • 2 clove Garlic cloves
  • 2 tablespoon Tomato paste
  • 1 cup Mixed vegetables
  • 1 teaspoon Thyme
  • 1 teaspoon Rosemary
  • 1 leaf Bay leaf
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Olive oil
Instructions
  1. Preheat the oven to 180°C (350°F).
  2. In a large pot, cook lentils in vegetable broth until tender.
  3. Meanwhile, chop carrots, potatoes, onion, and garlic cloves.
  4. In a separate pan, heat olive oil and sauté the chopped vegetables until softened.
  5. Add tomato paste, mixed vegetables, thyme, rosemary, bay leaf, salt, and black pepper to the pan. Stir well.
  6. Transfer the cooked lentils and vegetable mixture to a baking dish.
  7. Cover the dish with foil and bake for 30 minutes.
  8. Remove the foil and bake for an additional 15 minutes to allow the top to brown.
  9. Let it rest for 10 minutes before serving.
  10. Serve hot and enjoy!
