Ingredients
  • 8 ounce Rice noodles
  • 4 tablespoon Peanut butter
  • 2 tablespoon Soy sauce
  • 2 tablespoon Lime juice
  • 1 tablespoon Maple syrup
  • 2 clove Garlic
  • 1 teaspoon Ginger
  • 1 teaspoon Red pepper flakes
  • 2 cup Spinach
  • 1 medium Carrot
  • 2 stalk Green onion
  • 2 tablespoon Roasted peanuts
  • 2 tablespoon Cilantro
Instructions
  1. Cook rice noodles according to package instructions. Drain and set aside.
  2. In a small bowl, whisk together peanut butter, soy sauce, lime juice, maple syrup, minced garlic, grated ginger, and red pepper flakes.
  3. In a large skillet, heat a tablespoon of oil over medium heat. Add sliced carrot and cook for 3-4 minutes until slightly softened.
  4. Add cooked rice noodles, spinach, and the peanut butter sauce to the skillet. Toss everything together until well combined and heated through.
  5. Serve the noodles in bowls, topped with sliced green onions, roasted peanuts, and fresh cilantro.
