Ingredients
  • 2 cup Spelt flour
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Baking soda
  • 1 teaspoon Cinnamon
  • 1/4 teaspoon Salt
  • 1 cup Ripe bananas
  • 1/2 cup Coconut sugar
  • 1/4 cup Coconut oil
  • 1/4 cup Almond milk
  • 1 teaspoon Vanilla extract
  • 1/2 cup Chopped walnuts
Instructions
  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, whisk together the spelt flour, baking powder, baking soda, cinnamon, and salt.
  3. In a separate bowl, mash the ripe bananas with a fork until smooth. Add the coconut sugar, coconut oil, almond milk, and vanilla extract. Stir until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the chopped walnuts.
  5. Transfer the batter to the greased loaf pan and smooth the top. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  6. Remove from the oven and let the banana bread cool in the pan for 10 minutes. Then, transfer to a wire rack to cool completely before slicing and serving.
