Vegan Roulade

Preheat the oven to 375°F (190°C). Drain and press the tofu to remove excess moisture.

In a pan, sauté the spinach, carrots, red bell pepper, onion, and garlic in olive oil until softened. Season with soy sauce, nutritional yeast, ground flaxseed, water, salt, black pepper, smoked paprika, dried thyme, and dried rosemary.

In a mixing bowl, combine the sautéed vegetables with crumbled tofu. Mix well.

In a separate bowl, whisk together whole wheat flour, baking powder, almond milk, and salt until smooth.

Spread the tofu and vegetable mixture onto a baking sheet lined with parchment paper. Pour the batter over the mixture and spread it evenly.

Bake in the preheated oven for 30-35 minutes, or until the roulade is firm and golden brown.

Remove from the oven and let it rest for 10 minutes. Garnish with fresh parsley.
