Ingredients
  • 500 gram Radishes
  • 2 teaspoon Olive Oil
  • 2 tablespoon Lemon Juice
  • 1 tablespoon Maple Syrup
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 1 cup Mixed Greens
  • 1 medium Avocado
  • 1 small Red Onion
  • 2 tablespoon Pumpkin Seeds
  • 2 tablespoon Fresh Mint
Instructions
  1. Preheat the oven to 425°F (220°C).
  2. Trim and halve the radishes. Toss them with olive oil, lemon juice, maple syrup, salt, and black pepper.
  3. Spread the radishes on a baking sheet and roast for 15-20 minutes, or until tender and lightly browned.
  4. In a large bowl, combine the roasted radishes, mixed greens, sliced avocado, thinly sliced red onion, pumpkin seeds, and fresh mint.
  5. Toss everything together gently.
  6. Serve immediately and enjoy!
