Ingredients
  • 1 cup Red Lentils
  • 1 medium Onion
  • 2 medium Carrot
  • 2 stalk Celery
  • 2 clove Garlic
  • 4 cup Vegetable Stock
  • 2 tablespoon Tomato Paste
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Turmeric
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 2 tablespoon Lemon Juice
  • 2 tablespoon Fresh Cilantro
Instructions
  1. Rinse the red lentils under cold water.
  2. In a large pot, heat some oil and sauté the onion, carrot, celery, and garlic until softened.
  3. Add the rinsed red lentils, vegetable stock, tomato paste, cumin, paprika, turmeric, salt, and black pepper to the pot. Stir well.
  4. Bring the soup to a boil, then reduce the heat and let it simmer for about 25 minutes or until the lentils are cooked and tender.
  5. Remove the pot from the heat and blend the soup until smooth using an immersion blender or a regular blender.
  6. Stir in the lemon juice and fresh cilantro.
  7. Serve hot and enjoy!
