Ingredients
  • 2 teaspoon Coconut oil
  • 1 medium Onion
  • 3 clove Garlic cloves
  • 2 tablespoon Red curry paste
  • 1 can Coconut milk
  • 2 cup Pineapple chunks
  • 1 medium Bell pepper
  • 2 medium Carrot
  • 1 cup Green beans
  • 2 tablespoon Basil leaves
  • 1 tablespoon Lime juice
  • 1 teaspoon Salt
  • 1 tablespoon Brown sugar
  • 4 cup Cooked rice
Instructions
  1. Heat coconut oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic cloves. Saute until onion becomes translucent.
  3. Stir in red curry paste and cook for 1-2 minutes.
  4. Pour in coconut milk and bring it to a simmer.
  5. Add pineapple chunks, sliced bell pepper, sliced carrot, and green beans. Cook until vegetables are tender.
  6. Stir in basil leaves, lime juice, salt, and brown sugar. Cook for an additional 2 minutes.
  7. Serve the curry over cooked rice.
