  1. In a microwave-safe bowl, melt the vegan chocolate chips and coconut oil in the microwave, stirring every 30 seconds until smooth.
  2. In a separate bowl, mix together the creamy peanut butter, maple syrup, vanilla extract, and sea salt until well combined.
  3. Line a muffin tin with paper or silicone liners.
  4. Spoon a small amount of the melted chocolate mixture into each liner, spreading it to cover the bottom.
  5. Place the muffin tin in the refrigerator for 10 minutes to allow the chocolate to firm up.
  6. Remove the muffin tin from the refrigerator and spoon a small amount of the peanut butter mixture on top of the chocolate layer.
  7. Pour the remaining melted chocolate over the peanut butter layer, covering it completely.
  8. Place the muffin tin back in the refrigerator for at least 1 hour to allow the peanut butter cups to set.
  9. Once set, remove the peanut butter cups from the muffin tin and enjoy!
