Ingredients
  • 250 gram Pasta
  • 400 gram Eggplant
  • 500 gram Tomatoes
  • 2 clove Garlic
  • 2 tablespoon Olive oil
  • 20 gram Basil leaves
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Red pepper flakes
Instructions
  1. Cook the pasta according to package instructions. Drain and set aside.
  2. Cut the eggplant into small cubes and sprinkle with salt. Let it sit for 15 minutes to remove excess moisture. Rinse and pat dry.
  3. Heat olive oil in a large pan over medium heat. Add the eggplant cubes and cook until golden brown, about 10 minutes.
  4. Add minced garlic and cook for another minute.
  5. Add the tomatoes, salt, black pepper, and red pepper flakes. Cook for 15 minutes, stirring occasionally.
  6. Add the cooked pasta to the pan and toss to combine.
  7. Serve hot, garnished with fresh basil leaves.
