Ingredients
  • 1 cup Lentils
  • 1 cup Walnuts
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 1 medium Carrot
  • 2 stalk Celery stalks
  • 1 can Crushed tomatoes
  • 2 tablespoon Tomato paste
  • 1 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. In a food processor, pulse lentils and walnuts until crumbly.
  2. Heat olive oil in a large pot over medium heat. Add onion, garlic, carrot, and celery. Cook until softened.
  3. Add lentil and walnut mixture to the pot and cook for 5 minutes.
  4. Stir in crushed tomatoes, tomato paste, vegetable broth, dried basil, dried oregano, salt, and black pepper. Simmer for 20 minutes.
  5. Serve the sauce over cooked pasta.
