Ingredients
  • 300 gram Potatoes
  • 200 gram Carrots
  • 150 gram Pickles
  • 100 gram Peas
  • 100 gram Corn
  • 50 gram Red Onion
  • 100 gram Vegan Mayonnaise
  • 1 teaspoon Dijon Mustard
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
Instructions
  1. Boil the potatoes and carrots until tender. Allow them to cool and then peel and dice them.
  2. Chop the pickles, red onion, and drain the peas and corn.
  3. In a large bowl, combine the diced potatoes, carrots, pickles, peas, corn, and red onion.
  4. In a separate bowl, mix the vegan mayonnaise, Dijon mustard, salt, and black pepper.
  5. Add the dressing to the salad and mix well.
  6. Let the salad rest in the refrigerator for at least 30 minutes before serving.
  7. Serve chilled and enjoy!
