Ingredients
  • 500 gram Asparagus
  • 1 medium-sized Onion
  • 2 clove Garlic
  • 4 cup Vegetable broth
  • 2 tablespoon Lemon juice
  • 1 cup Coconut milk
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 tablespoon Olive oil
  • 2 tablespoon Fresh parsley
Instructions
  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic, sauté until softened.
  3. Trim the ends of asparagus and cut into 1-inch pieces. Add asparagus to the pot and cook for 5 minutes.
  4. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes.
  5. Remove from heat and let it cool slightly.
  6. Using a blender, puree the soup until smooth.
  7. Return the soup to the pot and stir in coconut milk, lemon juice, salt, and black pepper.
  8. Simmer for another 5 minutes.
  9. Serve hot, garnished with fresh parsley.
