Ingredients
  • 2 cup Kale
  • 1 cup Fresh Basil Leaves
  • 2 clove Garlic Cloves
  • 2 tablespoon Lemon Juice
  • 2 tablespoon Nutritional Yeast
  • 2 tablespoon Pine Nuts
  • 4 tablespoon Extra Virgin Olive Oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
Instructions
  1. Wash the kale leaves and remove the tough stems.
  2. In a blender or food processor, add the kale, basil leaves, garlic cloves, lemon juice, nutritional yeast, pine nuts, salt, and black pepper.
  3. Blend on high speed until the ingredients are well combined.
  4. While the blender is still running, slowly drizzle in the olive oil until the pesto reaches a smooth consistency.
  5. Taste and adjust the seasoning if needed.
  6. Transfer the pesto to a jar or container and refrigerate until ready to use.
  7. Serve the vegan kale pesto with pasta, bread, or as a dip.
