Ingredients
  • 8 ounce Gluten-Free Macaroni
  • 1 cup Cashews
  • 2 tablespoon Nutritional Yeast
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Turmeric
  • 1 teaspoon Dijon Mustard
  • 1 tablespoon Lemon Juice
  • 1 cup Coconut Milk
  • 1 cup Vegetable Broth
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Paprika
  • 2 tablespoon Fresh Parsley
Instructions
  1. Cook the gluten-free macaroni according to the package instructions. Drain and set aside.
  2. In a blender, combine cashews, nutritional yeast, garlic powder, onion powder, turmeric, dijon mustard, lemon juice, coconut milk, vegetable broth, salt, and black pepper. Blend until smooth.
  3. In a large pan, heat the sauce mixture over medium heat until it thickens, stirring occasionally.
  4. Add the cooked macaroni to the sauce and mix well.
  5. Transfer the mixture to a baking dish and sprinkle with paprika.
  6. Bake at 350°F (175°C) for 20 minutes.
  7. Remove from the oven and let it rest for 5 minutes.
  8. Garnish with fresh parsley and serve hot.
