Ingredients
  • 1 cup Millet
  • 2 tablespoon Coconut Oil
  • 1 medium Onion
  • 2 clove Garlic
  • 1 teaspoon Ginger
  • 2 teaspoon Curry Powder
  • 1 teaspoon Turmeric Powder
  • 1 cup Cauliflower
  • 1 cup Carrot
  • 1 cup Green Peas
  • 1 cup Coconut Milk
  • 2 tablespoon Lime Juice
  • 1 teaspoon Salt
  • 2 tablespoon Cilantro
Instructions
  1. Rinse the millet under cold water and drain.
  2. Heat coconut oil in a large pan over medium heat.
  3. Add onion, garlic, and ginger. Cook until onion becomes translucent.
  4. Add curry powder and turmeric powder. Stir well.
  5. Add cauliflower, carrot, and green peas. Cook for 5 minutes.
  6. Add millet and stir to coat with the spices.
  7. Pour in coconut milk and bring to a boil.
  8. Reduce heat, cover, and simmer for 20 minutes or until millet is tender.
  9. Stir in lime juice and salt.
  10. Remove from heat and let it rest for 5 minutes.
  11. Garnish with cilantro and serve hot.
