Ingredients
  • 300 gram Mushrooms
  • 1 medium Onion
  • 2 clove Garlic
  • 4 cup Vegetable broth
  • 1 cup Coconut milk
  • 1 teaspoon Thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Olive oil
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, sauté until fragrant.
  2. Add sliced mushrooms and cook until they release their moisture.
  3. Pour in vegetable broth and bring to a simmer.
  4. Stir in coconut milk, thyme, salt, and black pepper.
  5. Let the soup simmer for 15 minutes.
