Ingredients
  • 1.5 cup Cashews
  • 1 cup Almond flour
  • 4 tablespoon Coconut oil
  • 4 tablespoon Maple syrup
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 0.5 cup Vegan chocolate chips
  • 1 cup Oats
  • 1 cup Medjool dates
  • 0.5 cup Almond butter
  • 2 tablespoon Coconut flour
  • 2 tablespoon Non-dairy milk
  • 0.25 cup Dark chocolate
Instructions
  1. In a food processor, blend cashews, almond flour, coconut oil, maple syrup, vanilla extract, and salt until smooth.
  2. Press the mixture into the bottom of a lined baking dish.
  3. In a separate bowl, mix vegan chocolate chips, oats, medjool dates, almond butter, coconut flour, and non-dairy milk until well combined.
  4. Spread the cookie dough mixture evenly over the cashew crust.
  5. Melt dark chocolate and drizzle it over the top of the bars.
  6. Place the baking dish in the refrigerator and let it set for at least 4 hours.
  7. Once set, cut into bars and serve.
