Ingredients
  • 1 medium Onion
  • 4 cloves Garlic cloves
  • 1 medium Bell pepper
  • 2 medium Carrot
  • 2 stalks Celery stalk
  • 2 cans Tomatoes
  • 2 cans Kidney beans
  • 2 cans Black beans
  • 1 cups Corn kernels
  • 2 tablespoons Chili powder
  • 1 teaspoons Cumin
  • 1 teaspoons Paprika
  • 1/2 teaspoons Cayenne pepper
  • 1/2 teaspoons Salt
  • 1/2 teaspoons Black pepper
  • 2 cups Vegetable broth
Instructions
  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, and cook until onion becomes translucent.
  3. Add bell pepper, carrot, and celery. Cook for about 5 minutes.
  4. Add tomatoes, kidney beans, black beans, corn, chili powder, cumin, paprika, cayenne pepper, salt, and black pepper. Stir well.
  5. Pour in vegetable broth and bring to a boil.
  6. Reduce heat and simmer uncovered for 30 minutes, stirring occasionally.
  7. Serve hot and enjoy!
