Ingredients
  • 1.5 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Ground ginger
  • 1 teaspoon Ground cardamom
  • 0.5 teaspoon Salt
  • 1 cup Soy milk
  • 0.5 cup Maple syrup
  • 0.25 cup Vegetable oil
  • 1 teaspoon Vanilla extract
  • 2 bags Chai tea bags
  • 1 cup Powdered sugar
  • 0.5 teaspoon Cinnamon powder
Instructions
  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together the flour, baking powder, cinnamon, ginger, cardamom, and salt.
  3. In a separate bowl, combine the soy milk, maple syrup, vegetable oil, and vanilla extract.
  4. Cut open the chai tea bags and add the contents to the wet ingredients. Stir well.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined.
  6. Divide the batter evenly among the cupcake liners.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let the cupcakes cool in the tin for 5 minutes. Then transfer them to a wire rack to cool completely.
  9. In a small bowl, whisk together the powdered sugar and cinnamon powder.
  10. Once the cupcakes are completely cooled, dust them with the cinnamon powdered sugar.
  11. Serve and enjoy!
