Ingredients
  • 1 head Cauliflower
  • 1 head Broccoli
  • 1 can Chickpeas
  • 1 bunch Kale
  • 1 medium Onion
  • 2 clove Garlic
  • 2 cup Vegetable broth
  • 1 cup Coconut milk
  • 1 teaspoon Turmeric
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Olive oil
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and sauté until fragrant.
  2. Add turmeric, cumin, paprika, salt, and black pepper. Stir well.
  3. Add cauliflower florets, broccoli florets, and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Stir in coconut milk and chickpeas. Cook for another 10 minutes.
  5. Add chopped kale and cook for an additional 5 minutes.
  6. Remove from heat and let the stew rest for 5 minutes.
  7. Serve hot and enjoy!
