  • 2 cup Butternut Squash
  • 2 cup Macaroni
  • 1 cup Cashews
  • 2 tablespoon Nutritional Yeast
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Dijon Mustard
  • 1 tablespoon Lemon Juice
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 tablespoon Fresh Parsley
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Peel and dice the butternut squash.
  3. Cook the macaroni according to package instructions.
  4. In a blender, combine the cooked butternut squash, cashews, nutritional yeast, garlic powder, onion powder, smoked paprika, Dijon mustard, lemon juice, salt, and pepper. Blend until smooth and creamy.
  5. Drain the cooked macaroni and mix it with the butternut squash sauce.
  6. Transfer the mixture to a baking dish and bake for 20 minutes.
  7. Remove from the oven and let it rest for 5 minutes.
  8. Garnish with fresh parsley before serving.
