Ingredients
  • 2 medium-sized Apples
  • 1.5 cup Oats
  • 1 cup Almond flour
  • 2 tablespoon Coconut oil
  • 3 tablespoon Maple syrup
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Baking powder
  • 1/2 teaspoon Vanilla extract
  • 1 pinch Salt
Instructions
  1. Preheat the oven to 350°F (180°C).
  2. Peel and core the apples, then grate them using a box grater.
  3. In a large mixing bowl, combine the grated apples, oats, almond flour, coconut oil, maple syrup, cinnamon, baking powder, vanilla extract, and salt. Mix well until all the ingredients are evenly combined.
  4. Line a baking sheet with parchment paper. Scoop spoonfuls of the cookie dough onto the prepared baking sheet, leaving some space between each cookie.
  5. Flatten each cookie slightly with the back of a spoon.
  6. Bake in the preheated oven for 15 minutes, or until the edges are golden brown.
  7. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
