  • 8 ounce Zucchini
  • 8 ounce Yellow Squash
  • 8 ounce Red Bell Pepper
  • 8 ounce Yellow Bell Pepper
  • 8 ounce Eggplant
  • 4 ounce Red Onion
  • 2 tablespoon Olive Oil
  • 2 tablespoon Balsamic Vinegar
  • 2 clove Garlic
  • 10 leaves Fresh Basil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
Instructions
  1. Preheat the grill to medium-high heat.
  2. Slice the zucchini, yellow squash, red bell pepper, yellow bell pepper, eggplant, and red onion into 1/4-inch thick slices.
  3. In a small bowl, whisk together olive oil, balsamic vinegar, minced garlic, salt, and black pepper.
  4. Brush the vegetable slices with the marinade on both sides.
  5. Grill the vegetables for about 4-5 minutes per side, or until they are tender and have grill marks.
  6. Remove the vegetables from the grill and let them rest for 5 minutes.
  7. Arrange the grilled vegetables on a platter and garnish with fresh basil leaves.
  8. Serve warm and enjoy!
