Ingredients
  • 500 gram Eggplant
  • 300 gram Tomatoes
  • 200 gram Onion
  • 3 clove Garlic
  • 3 tablespoon Olive oil
  • 20 gram Parsley
  • 2 tablespoon Lemon juice
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Ground cumin
Instructions
  1. Preheat the grill or oven to 200°C (400°F).
  2. Cut the eggplants in half lengthwise and score the flesh with a knife.
  3. Brush the eggplants with olive oil and sprinkle with salt and black pepper.
  4. Grill or bake the eggplants for 20 minutes, or until the flesh is soft and golden.
  5. Meanwhile, heat olive oil in a pan and sauté the onions and garlic until translucent.
  6. Add the tomatoes, cumin, salt, and black pepper to the pan and cook until the tomatoes are soft.
  7. Remove the eggplants from the grill or oven and let them rest for 10 minutes.
  8. Scoop out the flesh of the eggplants and chop it finely.
  9. Add the chopped eggplant flesh to the tomato mixture and cook for another 5 minutes.
  10. Stir in the parsley and lemon juice.
  11. Serve the Turkish Patlican with bread or rice.
