  • 500 gram Leeks
  • 2 teaspoon Olive oil
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 1 cup Green olives
  • 2 tablespoon Tomato paste
  • 1 cup Water
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Lemon juice
  • 2 tablespoon Fresh parsley
Instructions
  1. Trim the dark green parts of the leeks and cut them into 2-inch pieces.
  2. Rinse the leeks thoroughly to remove any dirt or grit.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add the onion and garlic cloves, sauté until softened.
  5. Add the leeks to the skillet and cook for 5 minutes, stirring occasionally.
  6. Stir in the green olives, tomato paste, water, salt, and black pepper.
  7. Reduce the heat to low, cover the skillet, and simmer for 30 minutes.
  8. Remove from heat and let it rest for 5 minutes.
  9. Drizzle with lemon juice and sprinkle with fresh parsley before serving.
