Ingredients
  • 2 piece Red bell peppers
  • 2 piece Yellow bell peppers
  • 4 piece Tomatoes
  • 1 cup Couscous
  • 2 tablespoon Olive oil
  • 2 tablespoon Lemon juice
  • 2 piece Garlic cloves
  • 2 tablespoon Fresh parsley
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Preheat the grill.
  2. Cut the bell peppers in half, remove the seeds, and flatten them.
  3. Grill the bell peppers and tomatoes until charred and tender.
  4. In the meantime, cook the couscous according to the package instructions.
  5. In a small bowl, mix olive oil, lemon juice, minced garlic, chopped parsley, salt, and black pepper.
  6. Remove the grilled vegetables from the grill and let them rest for a few minutes.
  7. Slice the bell peppers and dice the tomatoes.
  8. In a large bowl, combine the grilled vegetables, cooked couscous, and the olive oil mixture. Toss gently to combine.
