Ingredients
  • 1 cup Quinoa
  • 1 cup Coconut milk
  • 1 medium Mango
  • 1 medium Red bell pepper
  • 1 small Red onion
  • 1 bunch Cilantro
  • 1 medium Lime
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Rinse the quinoa under cold water and drain.
  2. In a saucepan, combine the quinoa, coconut milk, and 1 cup of water. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the quinoa is cooked and the liquid is absorbed.
  3. Meanwhile, chop the mango, red bell pepper, red onion, and cilantro.
  4. In a large bowl, combine the cooked quinoa, chopped mango, red bell pepper, red onion, and cilantro.
  5. Squeeze the juice of the lime over the quinoa mixture.
  6. Drizzle with olive oil and season with salt and black pepper. Toss to combine.
  7. Let the flavors meld for 5 minutes before serving. Enjoy!
