Ingredients
  • 2 medium Yellow summer squash
  • 2 medium Zucchini
  • 1 medium Green bell pepper
  • 1 medium Red bell pepper
  • 2 tablespoon Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • optional for garnish Fresh basil leaves
Instructions
  1. Preheat the grill to medium-high heat.
  2. Slice the yellow summer squash and zucchini into 1/4-inch thick rounds.
  3. Cut the green and red bell peppers into 1-inch wide strips.
  4. In a small bowl, mix together olive oil, garlic powder, salt, and black pepper.
  5. Brush the squash rounds and bell pepper strips with the olive oil mixture.
  6. Place the vegetables on the grill and cook for about 5-7 minutes on each side, or until tender and lightly charred.
  7. Remove from the grill and let rest for 5 minutes.
  8. Garnish with fresh basil leaves, if desired.
