Ingredients
  • 1 cup Quinoa
  • 1 can Black beans
  • 1 cup Corn kernels
  • 1 piece Red bell pepper
  • 1 small Red onion
  • 1 cup Cherry tomatoes
  • 1 piece Avocado
  • 2 tablespoon Cilantro
  • 1 piece Lime
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Cook quinoa according to package instructions.
  2. In a large bowl, combine cooked quinoa, black beans, corn kernels, diced red bell pepper, finely chopped red onion, halved cherry tomatoes, diced avocado, and chopped cilantro.
  3. In a small bowl, whisk together lime juice, olive oil, salt, and black pepper.
  4. Pour the dressing over the quinoa mixture and toss gently to combine.
  5. Let the salad rest for 5 minutes to allow flavors to meld.
  6. Serve chilled and enjoy!
