Ingredients
  • 2 cup Couscous
  • 2 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 2 medium Carrots
  • 2 medium Zucchini
  • 4 medium Tomatoes
  • 1 can Chickpeas
  • 1 cup Raisins
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh parsley
  • 2 tablespoon Fresh mint
  • 1 1 Lemon
Instructions
  1. In a large bowl, combine couscous and vegetable broth. Let it sit for 10 minutes.
  2. In a large pot, heat olive oil over medium heat. Add onion and garlic, and sauté until translucent.
  3. Add carrots, zucchini, tomatoes, chickpeas, raisins, cumin, coriander, cinnamon, salt, and black pepper to the pot. Stir well.
  4. Add the couscous mixture to the pot and stir to combine.
  5. Cover the pot and simmer for 30 minutes, or until the vegetables are tender.
  6. Fluff the couscous with a fork and stir in fresh parsley and mint.
  7. Serve the couscous with lemon wedges on the side.
