Ingredients
  • 2 cup Oats
  • 1 cup Unsweetened shredded coconut
  • 1 cup Almond flour
  • 1/2 cup Coconut sugar
  • 1/2 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1/4 cup Coconut oil
  • 1/4 cup Maple syrup
  • 1/2 teaspoon Vanilla extract
Instructions
  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the oats, shredded coconut, almond flour, coconut sugar, baking powder, and salt.
  3. In a separate microwave-safe bowl, melt the coconut oil. Stir in the maple syrup and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until well combined.
  5. Using a cookie scoop or tablespoon, drop rounded portions of the mixture onto the prepared baking sheet.
  6. Flatten each portion slightly with the back of a spoon.
  7. Bake for 12-15 minutes, or until the edges are golden brown.
  8. Remove from the oven and let cool on the baking sheet for 5 minutes.
  9. Transfer the macaroons to a wire rack to cool completely.
