Ingredients
  • 500 gram Tomatoes
  • 1 piece Onion
  • 2 clove Garlic
  • 2 cup Vegetable Stock
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 10 leaves Fresh Basil
  • 2 tablespoon Cream (optional)
Instructions
  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic. Cook until onion is translucent.
  3. Add tomatoes and vegetable stock. Bring to a boil and then reduce heat to simmer for 20 minutes.
  4. Use an immersion blender to puree the soup until smooth.
  5. Season with salt and black pepper.
  6. Serve hot, garnished with fresh basil leaves and a dollop of cream if desired.
